Alissaeon is a family-owned olive oil producer from Alissos, a small seaside village in the Peloponnese. For three generations, our family has cultivated olive trees with respect for nature, tradition, and quality. Our story is one of passion and dedication — a legacy that continues from the hands of our ancestors to the present day.
The Land and the Microclimate
Our olive groves lie close to the sea, where the gentle coastal breeze meets fertile Mediterranean soil. The combination of sunlight, sea breeze, and natural humidity creates a unique microclimate that defines the distinctive character of Alissaeon. This harmony of elements gives our olive oil its distinct aroma, balance, and freshness — the pure expression of our land.
The Olive Variety
Our olive oil is produced exclusively from Koroneiki olives, the “queen” of Greek varieties, known since ancient times for the exceptional quality of its oil. The olives are harvested early, while still green and rich in polyphenols — the secret behind the freshness and beneficial properties of our olive oil.
Tasting Profile
A harmonious blend of fresh and earthy notes. Alissaeon EVOO boasts the aromatic essence of ripe tomato leaves and the vegetal depth of artichoke, enriched with the refreshing sharpness of freshly cut grass. Subtle hints of walnut provide a creamy and nutty undertone, creating a well-rounded and unforgettable flavor profile.
Sustainability
We cultivate our olive groves with respect for the environment and minimal intervention. We prioritize biodiversity, natural soil balance, and sustainable production practices. Every drop of Alissaeon represents a harmonious bond between people and nature.
Harvest and Production
Harvest takes place at the end of October, when the olives reach their ideal stage of ripeness. The fruit is hand-picked and immediately transported to the mill to be pressed the very same day. The process is carried out using cold extraction (27°C) and gentle malaxation for 40 minutes, ensuring that all aromatic and nutritional elements are preserved. Each stage of production is guided by precision, care, and respect for nature.
